Beer-Infused Boeuf Bourguignon

Indulge in a flavorful twist on the classic French dish, Boeuf Bourguignon, by infusing it with the rich taste of beer. This hearty stew brings together tender beef, aromatic vegetables, and the robust essence of beer for a comforting and satisfying meal.

Ingredients:

  • 2 pounds (900g) beef chuck, cut into chunks
  • 2 tablespoons olive oil
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 cups (475ml) beer (preferably a darker ale)
  • 1 cup (240ml) beef broth
  • 1 bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste
  • 8 ounces (225g) mushrooms, halved
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat and Sear Beef: In a Dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat. Pat the beef chunks dry with paper towels and season with salt and pepper. Brown the beef in batches until well-seared on all sides. Remove and set aside.
  2. Saute Bacon and Aromatics: In the same pot, add the chopped bacon and cook until it renders its fat. Add the chopped onion, carrots, and garlic. Cook until the vegetables are softened, about 5-7 minutes.
  3. Add Tomato Paste and Beer: Stir in the tomato paste and cook for another minute. Pour in the beer, scraping the bottom of the pot to deglaze and release any browned bits. Allow it to simmer for a few minutes to reduce slightly.
  4. Combine Beef, Broth, and Bouquet Garni: Return the seared beef to the pot. Pour in the beef broth and add the bouquet garni. Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for 2-2.5 hours, or until the beef is tender.
  5. Add Mushrooms and Finish: In the last 30 minutes of cooking, add the halved mushrooms to the pot. Simmer until they are cooked through and the flavors meld together.
  6. Serve: Discard the bouquet garni. Serve the beer-infused Boeuf Bourguignon hot, garnished with chopped fresh parsley. It pairs wonderfully with crusty bread, mashed potatoes, or over egg noodles.
