Classic Boeuf Bourguignon

Ingredients:

  • 2 pounds (900g) beef chuck, cut into chunks
  • 4 slices bacon, chopped
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 cups (475ml) red wine (Burgundy or any full-bodied red)
  • 2 cups (475ml) beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 pound (450g) mushrooms, quartered
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Sear the Beef: Pat the beef dry and season with salt and pepper. In a large pot or Dutch oven over medium-high heat, cook the bacon until crispy. Remove the bacon and set it aside. In the same pot, add olive oil and sear the beef chunks in batches until browned on all sides. Remove the beef and set it aside with the bacon.
  2. Saute Vegetables: In the same pot, add diced onion, sliced carrots, and minced garlic. Cook for 3-4 minutes until softened. Stir in the tomato paste and cook for an additional minute.
  3. Deglaze with Wine and Broth: Return the beef and bacon to the pot. Pour in the red wine, scraping the bottom to release any browned bits. Add beef broth, thyme, bay leaves, and bring the mixture to a simmer.
  4. Simmer and Cook: Reduce the heat to low, cover the pot, and let it simmer for 2 to 2.5 hours, or until the beef is tender. Check occasionally and add more broth if needed.
  5. Saute Mushrooms: In a separate pan, melt butter over medium heat. Add quartered mushrooms and sauté until they’re golden brown and tender, about 5-7 minutes.
  6. Finish the Dish: Once the beef is tender, remove the thyme sprigs and bay leaves from the pot. Stir in the sautéed mushrooms. Taste and adjust seasoning if necessary. Simmer for an additional 10-15 minutes.
  7. Serve: Garnish with chopped fresh parsley if desired. Serve the boeuf bourguignon hot, accompanied by crusty bread or over mashed potatoes, allowing the flavors to delight your palate.
